Black Forest Chocolate Cookie

Another school year has begun in the Austin household and with it comes the question…what do I pack in Nicholas and Alex’s lunches?? For the first four days of the school year they had snickerdoodles and chocolate chip cookies for dessert. But as their mom, I can tell that they are getting a little sick of the old stand by cookies. Time to try something new. Lucky for me there are still a couple of cookie recipes in BAKED New Frontiers in Baking that I haven’t tried. So, I picked one. Black Forest Chocolate Cookies found on page 142. After reading through the recipe a couple of thoughts came to mind…wow, that is a lot of chocolate and these are going to be so good. After making the dough and letting it chill overnight in the refrigerator I baked these babies off. After my husband had one, then William had one, then Nicholas and Alex had one it was finally my turn. Oh my, is all I can say. They are really rich and chocolatey with a soft center and the slight tartness of the dried cherries goes perfectly with the three different types of chocolate in the cookies. Alex had the only minuscule negative comment and that was he would prefer them without the dried cherries. Did he still take them to school the next day for lunch?? Um, yes he did. The cherries must not bother him too much. When you want only one cookie, black forest chocolate cookies should be what you reach for. Definitely make these, you will not be disappointed.
