Peanut Butter Cookies – with milk chocolate chips, is what I have decided to bake next. You can find this recipe in the cook book, BAKED New Frontiers in Baking on page 140. I think that cookies are one of my favorite foods to eat. Who doesn’t like to eat a warm, gooey, fresh from the oven cookie every now and again?? When our oldest son Nicholas was in elementary school we decided to stop buying store bought cookies. We decided for our family, to stop ingesting ingredients that can’t be pronounced, high fructose corn syrup and food additives. You would have thought that his little world was coming to an end. That meant to him, no more oreos and chocolate chip cookies like all of his friends. That is when I began baking a lot of cookies. We still give our boys cookies in their lunch boxes but they are homemade. At least we can pronounce all of the ingredients, they are still loaded with sugar, but that is something that I am not willing to live without. Well, these yummy creations bring a smile to his face every time I make them. He claims that in 5th grade he could trade an entire lunch for one of these peanut butter milk chocolate chip cookies. He also claims that he didn’t take the trade, and as his mother, I believe him ( well I am ok with living in denial about this one little tidbit. ) After my husband took the photos for this post, Nicholas finished one of the cookies and he says that they are still his favorite. Only cream cheese frosting could make them better in his eyes. I will not be trying these with the frosting, that just sounds wrong to me. The recipe calls for 6 ounces of chocolate chips, but I add 16 ounces. The first time baking them, I did follow the recipe exactly, but my family and I decided we needed more chocolate. I have also tried making them without flattening them slightly, and they don’t turn out as perfect as they do when slightly pressed down. Seriously, if you are in need of a new baking only cook book, this is the one for you!!!

These cookies need to be slightly smashed before being sprinkled with granulated sugar. They just spread a little too irregular for my liking if left in a ball form.
